If you are getting bored of having typical fish curry, fried fish and fried fish curry, why not you try to create new fish curry dish!
All the ingredients are available at METRO Wholesale Myanmar.
1 onion, 1 clove of garlic ,1 chilli
100 g sugar3 sticks of celery ,1 sweet pepper ,200 g sugar peas
1 leek, 2 stalks of lemon grass
750 g fish (curry cut) and 12 shrimps
1 tbsp. palm sugar( jaggery) , 2 tbsp. curry powder
2 tbsp. fish sauce and 2tbsp. soy sauce
800 ml fish stock, 4 kaffir lime leaves
3 stalks of Thai Basil, 3 stalks of coriander
Cooking and Preparation:
Finely slice the onion, the garlic and the chilli and cut the vegetables into strips. Bruise and coarsely cut up the lemon grass.
Cut the fish into small pieces and trim the shrimps. Lightly braise the onions with the garlic and the chilli in a wok containing a little peanut oil.
Add the vegetables and lightly toast them with the palm sugar and the curry powder. Slake everything with the fish and soy sauce.
Top it up with the fish stock and add the lemon grass and the kaffir leaves. Simmer everything for 5 minutes. Then add the shrimps and the fish and leave to simmer again for 5 minutes. Shred the herbs, enhance the curry with them and serve it.
Tip: Those who want to can further enhance the curry with curry powder.
